2015-CURRENT
After completing my apprenticeship and graduating as a Chef, I opened this restaurant with a vision of educating the local community about authentic Italian food. My mother in law, Catinalla, taught me many things. I had a 180m2 vegetable garden at a property in Glengarry which I grew a lot of our produce. The first two years I was FOH and yearned for the kitchen. I took on business partners to take over so I could remain BOH. My duties here are: Creating menu’s, staff rostering, accounts payable, payroll, xero input, catering, staff education, customer service, liaising with Corporates for catering or functions, budgeting, ordering, end of shift administration and cooking.
DIRECTOR/ RESTAURATEUR-THE3844, TRARALGON.
2011-2014
I opened this establishment for women to feel safe and comfortable in an environment that was warm, friendly and a little quirky. My passion here was local produce and wine. I developed a relationship with local growers, producers and winemakers. I also had fruit trees which I utilized in my cooking. My duties here were staff rostering,( again I used youth and unemployed women), staff management, catering, functions,( private & corporate), fundraising for Community projects,( Bol Aid & Landfill Harmonic), budgeting, ordering and end of shift administration. I also began my apprenticeship as a chef.
I sold out to my business partner in 2014.
SOLE TRADER- STAR CAFÉ LARDER, TRARALGON
2005-2012
This was a beautiful old, heritage listed building in Traralgon that was up for tender. After 18 months, I finally managed to open. It was a 3 day per week business that I ran along side of nursing at the local hospital.
I invented recipes based on my mother in laws cooking, used local ingredients I sourced from local growers and cooked everything onsite as well as stocking the retail shelves. I also had a vegetable garden here with fruit trees, using the produce on my menu. I also recycled our coffee grounds as fertilizer for the gardens. My duties consisted of staff management, rostering, payroll, ,catering, corporate and private functions. My staff here consisted of youth,(first employment) and women that were returning to the work force after raising a family and not having any qualifications. I sold this business 18 months after opening my next business.
SOLE TRADER- BUCKLE INN CAFÉ, MORWELL
1993-1996
I took over this business from my parents on my return from OS travel. My roles here were staff management, payroll, rostering, cooking, ordering, corporate functions and catering with Government Departments. I closed this business at the end of lease as I was expecting my first child.
LICENSEE/MANAGER- ROYAL HOTEL, FOOTSCRAY
1989-1993
I was a live on Premise Licensee/Manager for 4 years. The hotel consisted of an 80 seat bistro, public bar and bottle shop. My duties were staff management comprising of BOH and FOH staff, client liaising with functions and catering, dealing with corporates such as NAB, stock ordering, weekly budgets, money handling, end of shift administration.
